One person, here every day.
Soseul is a small, one-person cafe.
There is room between the seats, and time to settle in.

A day at Soseul

I open in the morning.
As the light warms the floor, I start the grinder, then heat the water.
Most days begin in that order.
Most seats face the bar.
People tell me it feels easy to sit here without having to make conversation.
That is enough.
The room changes with the season.
Open doors in summer; a little light and shelter in winter.
A space should make room for the people in it.
Beans and brewing
I buy from one coffee supplier and keep the selection small.
I adjust the brew as the beans rest, keeping notes on the cups that taste best.
